  • 1 pound chicken sausage links sliced into 1-inch rounds
  • 1 large red bell pepper cut into 1-inch pieces
  • 1 large yellow bell pepper cut into 1-inch pieces
  • 1 medium zucchini sliced into half-moons
  • 1 medium red onion cut into wedges
Seasonings
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • 0.5 tsp garlic powder
  • 0.5 tsp paprika
  • 0.25 tsp black pepper
  • 0.5 tsp salt
  • 2 tbsp fresh parsley chopped, for garnish

Method
 

  1. Preheat your air fryer to 400°F (200°C) for 3-5 minutes while you prepare the ingredients.
  2. Slice the chicken sausage into 1-inch rounds, ensuring uniform thickness for even cooking.
  3. Cut all vegetables into similar-sized pieces (approximately 1-inch) to ensure they cook at the same rate.
  4. In a large mixing bowl, combine the sliced sausage and chopped vegetables.
  5. Drizzle olive oil over the mixture and toss to coat everything evenly.
  6. Sprinkle Italian seasoning, garlic powder, paprika, salt, and black pepper over the ingredients.
  7. Toss everything together until the sausage and vegetables are well-coated with oil and seasonings.
  8. Transfer the mixture to the air fryer basket, spreading it in a single layer as much as possible.
  9. Cook for 8-10 minutes, shaking the basket halfway through cooking time to ensure even browning.
  10. Check for doneness - sausage should be heated through and vegetables should be tender with slight caramelization.
  11. Remove from air fryer and garnish with fresh chopped parsley before serving.
  12. Serve immediately while hot, either as a standalone meal or over rice, pasta, or quinoa.

Notes

For best results, don't overcrowd the air fryer basket. Cook in batches if necessary. Store leftovers in refrigerator for up to 4 days and reheat in air fryer at 350°F for 3-4 minutes.
