  • 1 cup couscous
  • 1 cup water or broth boiling
  • 0.5 cup sun-dried tomatoes chopped
  • 0.5 cup feta cheese crumbled
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 clove garlic minced
  • 0.25 cup parsley chopped

Method
 

  1. Hydrate couscous with boiling liquid.
  2. Fluff couscous.
  3. Mix dressing.
