  • 1 cup powdered sugar
  • 1 cup shredded coconut plus extra for coating

Method
 

  1. In a large mixing bowl, combine the creamy peanut butter and powdered sugar using a sturdy wooden spoon or spatula until the mixture comes together into a thick, uniform dough.
  2. Once the mixture is well combined, use your hands to knead it a few times to ensure everything is evenly distributed and the texture is smooth throughout.
  3. Using a small cookie scoop or tablespoon, portion out equal amounts of the peanut butter mixture and roll each portion between your palms to form smooth, round balls approximately one inch in diameter.
  4. Place the shredded coconut in a shallow dish or plate, then roll each peanut butter ball in the coconut, pressing gently to ensure the coconut adheres to the surface.
  5. Continue this process until all the peanut butter mixture has been shaped and coated, arranging the finished balls on a parchment-lined plate or tray.
  6. For best results, refrigerate the peanut butter balls for at least 30 minutes before serving to allow them to firm up and the flavors to meld together beautifully.
  7. Store any leftover peanut butter balls in an airtight container in the refrigerator for up to two weeks, or freeze them for up to three months for longer storage.
  8. Before serving frozen peanut butter balls, allow them to sit at room temperature for about 5-10 minutes to soften slightly for the best texture and flavor experience.

Notes
