Ingredients
  

  • 1 lb chicken breast or thighs boneless, skinless
  • 1 tbsp olive oil
  • 1 onion chopped
  • 4 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 1 tsp turmeric
  • 0.5 tsp black pepper
  • 4 cups chicken broth
  • 3 cups cauliflower florets
  • 1 tbsp lemon juice fresh

Method
 

  1. Heat olive oil in a pot and sauté onion until soft.
  2. Add garlic, ginger, turmeric, and black pepper; cook until fragrant.
  3. Add chicken and broth; bring to a simmer.
  4. Cook until chicken is done, then shred and return to pot.
  5. Add cauliflower and simmer until tender.
  6. Finish with lemon juice and herbs, then serve warm.

Notes

Blend part of the soup for a creamier texture if desired.
