Ingredients
  

Sauce
  • 3 tbsp creamy peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar or lime juice
  • 1 tbsp honey or maple syrup
  • 1 tsp sesame oil
  • 1 clove garlic grated or minced
  • 1 tsp chili flakes optional
  • 3 tbsp warm water to thin sauce
Noodles
  • 6 oz noodles spaghetti, ramen, or rice noodles
  • 1 tsp salt for boiling water

Method
 

  1. Boil noodles in salted water according to package directions.
  2. In a bowl, whisk together peanut butter, soy sauce, vinegar, honey, sesame oil, garlic, and chili flakes.
  3. Add warm water to thin the sauce to desired consistency.
  4. Drain noodles and toss immediately with peanut sauce until evenly coated.
  5. Garnish with peanuts, scallions, and cilantro before serving.

Notes

For a spicy version, add chili oil or Sriracha. Great hot or cold!
