Ingredients
  

Main
  • 2 chicken breasts
  • 2 cups broccoli florets
  • 1 bell pepper sliced
  • 1 carrot sliced
  • 2 tbsp olive oil
  • 4 cloves garlic minced
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp lemon juice optional
  • fresh parsley for garnish

Method
 

  1. Drizzle chicken breasts with olive oil and season with salt, pepper, paprika, and Italian seasoning.
  2. Toss broccoli, bell pepper, and carrot with garlic, olive oil, salt, and pepper.
  3. Preheat air fryer to 380°F (193°C) for 3 minutes.
  4. Place chicken breasts on one side of the air fryer basket.
  5. Add vegetables to the other side of the basket.
  6. Cook at 380°F for 10 minutes.
  7. Flip chicken and shake vegetables, then cook another 8–10 minutes.
  8. Remove chicken and rest 3 minutes before slicing.
  9. Add lemon juice if desired, garnish with parsley, and serve.

Notes

Add sweet potatoes or zucchini for variation, or season with Cajun or taco seasoning.
