- Cut pork chops into 1-inch cubes and pat dry with paper towels.
- Toss pork with olive oil, salt, pepper, garlic powder, onion powder, paprika, thyme, and cayenne.
- Preheat air fryer to 400°F (200°C) for 3–5 minutes.
- Arrange pork bites in a single layer and air fry for 10–12 minutes, shaking halfway.
- Whisk together mayonnaise, Dijon, honey, lemon juice, and pepper for dipping sauce.
- Serve hot pork bites with dipping sauce or side dishes.
