Method
- Preheat your air fryer to 380°F (193°C) for 3-5 minutes to ensure even cooking from the start.
- Peel the green plantains and slice them into 1-inch thick rounds, ensuring consistent thickness for uniform cooking.
- In a small bowl, mix the minced garlic with 2 tablespoons of water to create a garlic water mixture for the second frying.
- Lightly brush or spray the plantain rounds with 1 tablespoon of oil on both sides.
- Place the plantain rounds in the air fryer basket in a single layer, ensuring they don't overlap.
- Cook for 8-10 minutes, flipping halfway through, until they're golden and tender but not fully crispy yet.
- Remove the plantains from the air fryer and let them cool for 2-3 minutes until safe to handle.
- Using a tostonera (plantain press) or the bottom of a plate, gently flatten each piece to about ¼ inch thickness.
- Brush the flattened plantains with the garlic water mixture on both sides.
- Season with garlic powder, salt, pepper, paprika, and cumin, ensuring even coverage.
- Return the seasoned tostones to the air fryer and cook for an additional 5-7 minutes until golden brown and crispy.
- Remove from air fryer and immediately garnish with fresh cilantro if desired, and serve with lime wedges.
Notes
For best results, choose completely green plantains with no yellow spots. Store leftovers in refrigerator for up to 2 days and reheat in air fryer at 350°F for 2-3 minutes to restore crispiness.
