Ingredients
  

  • 1 tbsp olive oil
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 tsp turmeric
  • 0.5 tsp ginger ground
  • 2 carrots sliced
  • 2 stalks celery chopped
  • 1 lb chicken breast diced
  • 1 small head cauliflower cut into florets
  • 6 cups chicken broth
  • 1 tsp salt
  • 0.5 tsp black pepper

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté onion until soft.
  3. Add garlic, turmeric, and ginger; cook briefly.
  4. Add carrots and celery and stir.
  5. Add chicken and cook lightly.
  6. Add cauliflower and broth.
  7. Simmer for 20–25 minutes.
  8. Season with salt and pepper and serve.

Notes

Blend partially or fully for a creamier texture if desired.
