Ingredients
  

  • 1 cup unsalted butter melted and cooled
  • 1.5 cups light brown sugar packed
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1.75 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 1.5 tsp ground cinnamon
  • 1.5 cups chopped apples peeled and diced small
  • 2 tbsp granulated sugar for topping
  • 0.5 tsp cinnamon for topping

Method
 

  1. Preheat oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper.
  2. Whisk melted butter and brown sugar until smooth. Add eggs and vanilla; whisk until combined.
  3. In another bowl, combine flour, baking powder, salt, and cinnamon.
  4. Add dry ingredients to wet ingredients and stir just until combined.
  5. Fold in chopped apples evenly.
  6. Spread batter into pan. Combine sugar and cinnamon; sprinkle over top.
  7. Bake 35–40 minutes or until golden and a toothpick comes out with a few moist crumbs.
  8. Cool completely before slicing. Serve plain or with ice cream.

Notes

For extra chewiness, slightly underbake and cool completely before cutting.
