- Preheat oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper.
- Whisk melted butter and brown sugar until smooth. Add eggs and vanilla; whisk until combined.
- In another bowl, combine flour, baking powder, salt, and cinnamon.
- Add dry ingredients to wet ingredients and stir just until combined.
- Fold in chopped apples evenly.
- Spread batter into pan. Combine sugar and cinnamon; sprinkle over top.
- Bake 35–40 minutes or until golden and a toothpick comes out with a few moist crumbs.
- Cool completely before slicing. Serve plain or with ice cream.
Notes
For extra chewiness, slightly underbake and cool completely before cutting.
