Ingredients
  

Bread Batter
  • 1.75 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 1 tsp cinnamon
  • 0.25 tsp nutmeg
  • 0.5 cup unsalted butter softened
  • 0.75 cup brown sugar packed
  • 2 eggs large
  • 1 tsp vanilla extract
  • 0.5 cup reduced apple cider
  • 0.25 cup milk or buttermilk
Cinnamon Swirl
  • 0.33 cup brown sugar
  • 1 tbsp cinnamon
Glaze (optional)
  • 0.5 cup powdered sugar
  • 1-2 tbsp apple cider

Method
 

  1. Preheat oven to 350°F (175°C) and line a loaf pan with parchment paper.
  2. Simmer 1 cup of apple cider until reduced to ½ cup; let cool.
  3. Whisk together dry ingredients: flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. Cream butter and brown sugar; add eggs and vanilla.
  5. Stir in cooled apple cider and milk, then fold in dry ingredients.
  6. Layer half batter, sprinkle cinnamon-sugar, then add rest of batter and swirl.
  7. Bake 50–60 minutes or until a toothpick comes out clean.
  8. Cool, then drizzle with optional apple cider glaze.

Notes

Use real apple cider for the best flavor. This bread freezes beautifully for up to 2 months.
