Method
- Whisk together flour, eggs, milk, sugar, melted butter, vanilla, and salt until smooth.
- Let batter rest for 15 minutes.
- Cook diced apples in butter until soft.
- Add brown sugar, cinnamon, nutmeg, and lemon juice and cook until fragrant.
- Stir in cornstarch mixture and cook until slightly thickened.
- Pour batter into hot skillet and swirl thinly.
- Cook crepe about 1 minute, flip, and cook another 30 seconds.
- Fill crepes with apple mixture and fold.
- Serve warm with powdered sugar and syrup.
Notes
Crepe batter can be blended for extra smoothness. Keep cooked crepes covered so they stay soft.
