Ingredients
  

Cake Batter
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 0.5 cup brown sugar packed
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 0.5 tsp ground nutmeg
  • 0.5 tsp salt
  • 0.5 cup unsalted butter melted
  • 2 eggs large
  • 1 cup whole milk
  • 2 tsp vanilla extract
  • 3 apples medium, peeled and diced
  • 1 tbsp flour for coating apples
Crumb Topping
  • 0.5 cup all-purpose flour
  • 0.5 cup brown sugar packed
  • 0.33 cup cold unsalted butter cubed
  • 1 tsp ground cinnamon
  • 0.25 tsp salt
Cinnamon Apple Drizzle
  • 1 cup powdered sugar
  • 3-4 tbsp apple cider or apple juice
  • 0.5 tsp ground cinnamon
  • 0.25 tsp vanilla extract
  • 1 pinch salt

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9x13 inch baking pan. Line with parchment paper.
  2. In a large bowl, whisk together flour, sugars, baking powder, cinnamon, nutmeg, and salt.
  3. In separate bowl, whisk melted butter, eggs, milk, and vanilla until smooth.
  4. Toss diced apples with 1 tablespoon flour to coat evenly.
  5. Pour wet ingredients into dry ingredients, stir until just combined. Fold in apples gently.
  6. Spread batter evenly in prepared pan, smoothing top with spatula.
  7. For crumb topping, combine flour, brown sugar, cinnamon, and salt. Cut in cold butter until mixture resembles coarse crumbs.
  8. Sprinkle crumb topping evenly over cake batter, covering entire surface.
  9. Bake 35-40 minutes until toothpick inserted in center comes out with few moist crumbs.
  10. For drizzle, whisk powdered sugar, apple cider, cinnamon, vanilla, and salt until smooth.
  11. Cool cake 15 minutes, then drizzle glaze over top. Cool completely before cutting.

Notes

Store covered at room temperature up to 4 days. Can be frozen for up to 3 months. Drizzle may need refreshing after thawing.
