Ingredients
  

  • 2.25 cups all-purpose flour
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 1 tsp ground cinnamon
  • 0.75 cup unsalted butter softened
  • 0.75 cup brown sugar
  • 0.25 cup granulated sugar
  • 2 eggs large
  • 2 tsp vanilla extract
  • 1 cup diced apples peeled
  • 0.25 cup brown sugar for apple filling
  • 0.5 tsp nutmeg
  • 8 oz cream cheese softened

Method
 

  1. Prepare cheesecake filling and freeze until firm.
  2. Cook apple filling until soft and thick; cool completely.
  3. Mix dry ingredients in a bowl.
  4. Cream butter and sugars, then add eggs and vanilla.
  5. Combine wet and dry ingredients to form dough.
  6. Fill cookie dough with cheesecake and apple filling, sealing edges.
  7. Bake at 350°F (175°C) for 12–14 minutes.

Notes

Freeze cheesecake filling before assembling cookies for best results.
