Ingredients
  

Salad
  • 3 medium tomatoes finely diced
  • 2 Persian cucumbers finely diced
  • 0.25 small red onion minced
  • 0.5 cup fresh parsley chopped
  • 1 tbsp fresh mint optional
Dressing
  • 2 tbsp lemon juice
  • 2 tbsp extra virgin olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 tsp sumac optional

Method
 

  1. Finely dice tomatoes and cucumbers.
  2. Mince onion and chop parsley and mint.
  3. Combine vegetables in a bowl.
  4. Whisk dressing ingredients together.
  5. Pour dressing over salad and toss gently before serving.

Notes

Best served fresh. Add dressing just before serving for optimal texture.
