  • 1 pound ground beef 80/20 blend
  • 12 oz fresh egg noodles or dried Asian wheat noodles
  • 3 cloves garlic minced
  • 2 inches fresh ginger grated
  • 3 green onions chopped, whites and greens separated
  • 2 tbsp vegetable oil
Sauce
  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp sesame oil
  • 1 tsp cornstarch
  • 2 tbsp water or beef broth
  • 0.25 tsp red pepper flakes optional

Equipment

  • Large skillet or wok
  • Large pot for boiling noodles
  • Colander
  • Wooden spoon or spatula

Method
 

  1. Cook egg noodles according to package directions until al dente, drain well, and set aside.
  2. In a small bowl, whisk together soy sauce, oyster sauce, sesame oil, cornstarch, and water to create sauce mixture.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat until shimmering.
  4. Add ground beef, breaking up with wooden spoon, and cook 5-7 minutes until browned and cooked through.
  5. Push beef to one side, add garlic, ginger, and white parts of green onions to empty space.
  6. Cook aromatics 30-60 seconds until fragrant, then mix with beef.
  7. Add cooked noodles to pan and toss to combine with beef mixture.
  8. Pour prepared sauce over noodles and beef, tossing constantly to coat evenly.
  9. Cook 2-3 minutes, stirring continuously, until sauce thickens and coats noodles.
  10. Remove from heat, season with salt and pepper, garnish with remaining green onions and serve immediately.

Notes

For best results, use fresh egg noodles if available. The dish reheats well but may need a splash of broth to restore moisture. Can be customized with additional vegetables like bell peppers or mushrooms.
