Ingredients
  

Gumbo
  • 0.5 cup vegetable oil
  • 0.5 cup all-purpose flour
  • 1 lb chicken thighs cut
  • 12 oz andouille sausage sliced
  • 1 cup onion diced
  • 1 cup bell pepper diced
  • 1 cup celery diced
  • 4 cloves garlic minced
  • 6 cups chicken broth
  • 1 cup okra sliced
  • 2 tsp Cajun seasoning
  • 1 tsp paprika
  • 1 tsp thyme
  • 1 bay leaf

Equipment

  • Large pot
  • Wooden spoon
  • Knife
  • Cutting board

Method
 

  1. Make roux by cooking oil and flour.
  2. Add vegetables and cook.
  3. Add meat and stir.
  4. Add broth and seasoning.
  5. Simmer for 45–60 minutes.

Notes

Gumbo tastes better the next day.
