Ingredients
  

Bruschetta
  • 1 baguette or ciabatta loaf sliced 1/2 inch thick
  • 4–5 medium ripe tomatoes diced
  • 2–3 garlic cloves minced
  • 1/4 cup fresh basil leaves chopped
  • 1/4 cup grated Parmesan cheese
  • 3 tbsp extra virgin olive oil plus extra for brushing
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • balsamic glaze optional, for drizzling

Method
 

  1. Preheat oven to 375°F (190°C). Arrange sliced bread on a baking sheet and lightly brush with olive oil. Toast for 8–10 minutes until golden and crispy.
  2. While bread is still warm, rub each slice with a garlic clove. Sprinkle with grated Parmesan and return to oven for 2–3 minutes until cheese melts slightly.
  3. In a bowl, combine diced tomatoes, minced garlic, chopped basil, 3 tablespoons olive oil, salt, and pepper. Mix gently and let sit 5–10 minutes.
  4. Spoon tomato mixture over each toast and drizzle lightly with olive oil or balsamic glaze if desired.
  5. Serve immediately to enjoy crisp toasts and fresh tomato flavors.

Notes

Use fresh, ripe tomatoes and quality extra virgin olive oil for best flavor.
