- Preheat oven to 375°F (190°C). Arrange sliced bread on a baking sheet and lightly brush with olive oil. Toast for 8–10 minutes until golden and crispy.
- While bread is still warm, rub each slice with a garlic clove. Sprinkle with grated Parmesan and return to oven for 2–3 minutes until cheese melts slightly.
- In a bowl, combine diced tomatoes, minced garlic, chopped basil, 3 tablespoons olive oil, salt, and pepper. Mix gently and let sit 5–10 minutes.
- Spoon tomato mixture over each toast and drizzle lightly with olive oil or balsamic glaze if desired.
- Serve immediately to enjoy crisp toasts and fresh tomato flavors.
