Ingredients
  

  • 3 lb chicken pieces bone-in, skin-on
  • 1 tbsp brown sugar
  • 2 tbsp vegetable oil
  • 1 onion sliced
  • 1 bell pepper sliced
  • 3 cloves garlic minced
  • 3 scallions chopped
  • 4 sprigs fresh thyme
  • 1 Scotch bonnet pepper whole
  • 1 tomato chopped
  • 1 carrot sliced
  • 2 tbsp soy sauce
  • 1 tsp allspice
  • 1 tsp black pepper
  • 1.5 cups water or chicken stock

Equipment

  • Large heavy pot or Dutch oven
  • Knife
  • Cutting board

Method
 

  1. Season chicken thoroughly and marinate at least 1 hour.
  2. Heat oil and caramelize sugar until dark brown.
  3. Brown chicken on all sides, then remove.
  4. Sauté vegetables in same pot.
  5. Return chicken, add tomato, carrot, and liquid.
  6. Add Scotch bonnet, cover, and simmer until tender.
  7. Adjust seasoning and remove pepper before serving.

Notes

Flavor deepens overnight. Keep pepper whole to control heat.
