Method
- Season chicken thoroughly and marinate at least 1 hour.
- Heat oil and caramelize sugar until dark brown.
- Brown chicken on all sides, then remove.
- Sauté vegetables in same pot.
- Return chicken, add tomato, carrot, and liquid.
- Add Scotch bonnet, cover, and simmer until tender.
- Adjust seasoning and remove pepper before serving.
Notes
Flavor deepens overnight. Keep pepper whole to control heat.
