Avocado Deviled Eggs (No Mayo!)

Creamy deviled eggs made with ripe avocado instead of mayonnaise for a fresh, healthy twist on a classic appetizer.

Ingredients
  

Main Ingredients
  • 6 eggs large
  • 1 avocado ripe
  • 1 tbsp lime juice fresh
  • 1 clove garlic minced
  • 1 tbsp cilantro optional, chopped
  • salt to taste
  • black pepper to taste
  • smoked paprika for garnish

Equipment

  • Saucepan
  • Mixing bowl
  • Knife
  • Spoon or piping bag

Method
 

  1. Boil eggs, cover, and let sit 10–12 minutes. Cool in ice bath and peel.
  2. Slice eggs in half and remove yolks.
  3. Mash yolks with avocado, lime juice, garlic, salt, and pepper until smooth.
  4. Stir in cilantro if using.
  5. Spoon or pipe filling into egg whites and garnish with paprika.

Notes

Best served fresh. Add lime juice to prevent browning.
