- Boil eggs, cover, and let sit 10–12 minutes. Cool in ice bath and peel.
- Slice eggs in half and remove yolks.
- Mash yolks with avocado, lime juice, garlic, salt, and pepper until smooth.
- Stir in cilantro if using.
- Spoon or pipe filling into egg whites and garnish with paprika.
Notes
Best served fresh. Add lime juice to prevent browning.
