Ingredients
  

Casserole Base
  • 2 cups pancake mix or homemade batter
  • 1.5 cups milk
  • 3 eggs large
  • 2 tbsp butter melted
  • 8 strips bacon cooked and crumbled
  • 1.5 cups sharp cheddar cheese shredded
  • 0.5 cup mozzarella cheese shredded
  • 2 green onions chopped, optional
  • salt and pepper to taste

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9x13 inch baking dish with cooking spray.
  2. In a large mixing bowl, whisk together pancake mix, milk, eggs, and melted butter until just combined, leaving some lumps.
  3. Cook bacon strips until crispy, drain on paper towels, and crumble into bite-sized pieces.
  4. Fold crumbled bacon and half of both cheeses into pancake batter, mixing gently to distribute.
  5. Pour batter into prepared baking dish, spreading evenly with spatula.
  6. Sprinkle remaining cheeses over top, ensuring even coverage.
  7. Bake 25-30 minutes until center is set and top is golden brown and bubbly.
  8. Cool for 5 minutes before cutting into squares and serving warm.

Notes

Can be assembled the night before and refrigerated. Remove 30 minutes before baking. Serves well with maple syrup and fresh fruit.
