- Preheat oven to 350°F (175°C) and grease a 9x13 inch baking dish with cooking spray.
- In a large mixing bowl, whisk together pancake mix, milk, eggs, and melted butter until just combined, leaving some lumps.
- Cook bacon strips until crispy, drain on paper towels, and crumble into bite-sized pieces.
- Fold crumbled bacon and half of both cheeses into pancake batter, mixing gently to distribute.
- Pour batter into prepared baking dish, spreading evenly with spatula.
- Sprinkle remaining cheeses over top, ensuring even coverage.
- Bake 25-30 minutes until center is set and top is golden brown and bubbly.
- Cool for 5 minutes before cutting into squares and serving warm.
Notes
Can be assembled the night before and refrigerated. Remove 30 minutes before baking. Serves well with maple syrup and fresh fruit.
