Method
- Preheat oven to 350°F (175°C). Allow brie to come to room temperature for 30 minutes.
- Place brie wheel in a small, oven-safe baking dish that fits snugly around the cheese.
- Using a sharp knife, score the top of the brie in a crosshatch pattern, cutting about 1/4 inch deep.
- Spread fig jam evenly over the top of the scored brie, allowing it to seep into the cuts.
- Sprinkle toasted pecans over the fig jam, pressing gently to help them adhere.
- Drizzle with honey and add fresh thyme sprigs for garnish.
- Bake for 12-15 minutes, until cheese is soft and begins to ooze slightly at edges.
- Remove from oven and let cool 2-3 minutes. Serve immediately with crackers or baguette slices.
Notes
Choose properly ripened brie that feels soft when pressed. Serve immediately while warm for best texture. Can substitute fig jam with apricot preserves or cranberry sauce for seasonal variations.
