- Preheat oven to 425°F (220°C) and position rack in center.
- Combine all Cajun seasoning ingredients in a small bowl and whisk thoroughly.
- Pat shrimp completely dry with paper towels.
- In large bowl, combine olive oil, garlic, melted butter, lemon juice, and zest.
- Add shrimp to butter mixture and toss until completely coated.
- Sprinkle Cajun seasoning over shrimp and toss until evenly coated.
- Arrange shrimp in single layer in aluminum tray without overlapping.
- Pour remaining butter mixture over arranged shrimp.
- Bake 12-15 minutes until shrimp are pink, opaque, and slightly curled.
- Garnish with fresh parsley and serve with lemon wedges.
Notes
For best results, use large shrimp (16-20 count per pound). Don't overcook as shrimp will become rubbery. Serve immediately for optimal texture and flavor.
