Ingredients
  

For the Shrimp
  • 2 pounds large raw shrimp peeled and deveined
  • 0.25 cup olive oil
  • 4 cloves garlic minced
  • 0.25 cup butter melted
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
Cajun Seasoning Blend
  • 2 tablespoons paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon dried oregano
  • 1 tablespoon dried thyme
  • 1 teaspoon cayenne pepper
  • 1 teaspoon black pepper
  • 1 teaspoon white pepper
  • 1 teaspoon salt
  • 0.5 teaspoon smoked paprika

Equipment

  • Disposable aluminum trays
  • Large mixing bowl
  • Small mixing bowl
  • Whisk

Method
 

  1. Preheat oven to 425°F (220°C) and position rack in center.
  2. Combine all Cajun seasoning ingredients in a small bowl and whisk thoroughly.
  3. Pat shrimp completely dry with paper towels.
  4. In large bowl, combine olive oil, garlic, melted butter, lemon juice, and zest.
  5. Add shrimp to butter mixture and toss until completely coated.
  6. Sprinkle Cajun seasoning over shrimp and toss until evenly coated.
  7. Arrange shrimp in single layer in aluminum tray without overlapping.
  8. Pour remaining butter mixture over arranged shrimp.
  9. Bake 12-15 minutes until shrimp are pink, opaque, and slightly curled.
  10. Garnish with fresh parsley and serve with lemon wedges.

Notes

For best results, use large shrimp (16-20 count per pound). Don't overcook as shrimp will become rubbery. Serve immediately for optimal texture and flavor.
