Ingredients
  

Base
  • 1 block feta cheese about 7 oz
  • 4 eggs large
  • 2 cups fresh spinach
  • 1 cup cherry tomatoes halved
  • 2 tbsp olive oil
  • 1 clove garlic minced
  • 0.25 tsp red pepper flakes optional

Equipment

  • Small baking dish

Method
 

  1. Preheat oven to 400°F (200°C) and lightly grease a baking dish.
  2. Add spinach, tomatoes, garlic, olive oil, salt, and pepper to the dish.
  3. Place feta in the center and bake 12–15 minutes.
  4. Crack eggs around feta and return to oven.
  5. Bake until eggs are set to your liking.

Notes

Serve immediately with crusty bread or pita.
