Ingredients
  

Potatoes
  • 2 lbs baby potatoes halved if large
  • 4 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tsp dried oregano
  • 0.5 tsp dried thyme optional
  • 0.75 tsp salt
  • 0.5 tsp black pepper
Topping
  • 7 oz feta cheese block
  • 0.5 tsp red chili flakes optional
  • 2 tbsp fresh parsley chopped
  • 0.5 lemon juiced

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Toss potatoes with olive oil, garlic, oregano, thyme, salt, and pepper.
  3. Spread potatoes on a baking sheet in a single layer.
  4. Place feta block in the center and drizzle with olive oil.
  5. Bake 35–40 minutes until potatoes are golden and tender.
  6. Optional: Broil 2–3 minutes for extra crispiness.
  7. Toss gently, garnish with parsley and lemon juice, and serve.

Notes

For extra crispiness, avoid overcrowding the pan. Use block feta in brine for best texture.
