Method
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Wash and halve potatoes; pat dry.
- Toss potatoes with olive oil, garlic, salt, pepper, paprika, and half of rosemary and thyme.
- Spread in a single layer on baking sheet. Roast for 25–30 minutes, flipping halfway.
- Remove from oven and crumble feta evenly over potatoes. Bake 5–7 more minutes.
- Garnish with remaining herbs and parsley. Serve immediately.
Notes
Can prep potatoes ahead; reheat in oven for crispiness.
