Ingredients
  

Potatoes
  • 2 pounds baby or Yukon gold potatoes halved
Cheese & Flavorings
  • 6 oz feta cheese crumbled
  • 3 cloves garlic minced
  • 3 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika optional
Fresh Herbs
  • 1 tbsp rosemary chopped
  • 1 tbsp thyme leaves
  • 2 tbsp parsley chopped for garnish

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and halve potatoes; pat dry.
  3. Toss potatoes with olive oil, garlic, salt, pepper, paprika, and half of rosemary and thyme.
  4. Spread in a single layer on baking sheet. Roast for 25–30 minutes, flipping halfway.
  5. Remove from oven and crumble feta evenly over potatoes. Bake 5–7 more minutes.
  6. Garnish with remaining herbs and parsley. Serve immediately.

Notes

Can prep potatoes ahead; reheat in oven for crispiness.
