Method
- Preheat oven to 400°F (205°C).
- Season chicken with jerk seasoning, salt, and lime juice; let rest 15 minutes.
- Whisk pineapple juice, soy sauce, brown sugar, garlic, ginger, and oil.
- Place chicken in a baking dish and pour sauce over.
- Add pineapple chunks around the chicken.
- Bake 35–45 minutes, basting halfway through.
- Broil 2–3 minutes to caramelize if desired.
- Garnish with herbs and serve with lime wedges.
Notes
Use fresh pineapple for extra caramelization or add scotch bonnet for spicy heat.
