Cookie Dough
  • 1.5 cups rolled oats
  • 1 cup all-purpose flour
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 1 tsp cinnamon
  • 0.5 cup unsalted butter softened
  • 0.75 cup brown sugar packed
  • 0.25 cup granulated sugar
  • 1 egg large
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 cup pecans chopped and toasted
  • 2 tbsp corn syrup or honey

Equipment

Method
 

  1. Preheat oven and line baking sheet.
  2. Mix dry ingredients together.
  3. Cream butter and sugars.
  4. Add egg, maple syrup, and vanilla.
  5. Combine wet and dry ingredients.
  6. Fold in pecans and syrup.
  7. Scoop onto baking sheet.
  8. Bake until golden and set.

Notes

Chill dough for thicker cookies and enhanced flavor.
