Ingredients
  

Barley Base
  • 1 cup pearl barley rinsed
  • 2 cups mushrooms sliced
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 3 cups vegetable broth warm
  • salt and black pepper to taste
  • fresh herbs optional

Equipment

  • Large skillet or saucepan
  • Wooden spoon

Method
 

  1. Rinse pearl barley under cold water and set aside.
  2. Heat olive oil and butter in a skillet over medium heat.
  3. Add onion and cook until soft and translucent.
  4. Add mushrooms and cook until browned and tender.
  5. Stir in garlic and cook until fragrant.
  6. Add barley and stir to coat.
  7. Pour in vegetable broth, season, and simmer covered until barley is tender.
  8. Adjust seasoning and finish with herbs before serving.

Notes

This dish tastes even better the next day as flavors continue to develop.
