Method
- Steam or boil cauliflower florets until tender, about 8–10 minutes. Drain well.
- Mash cauliflower or pulse in a food processor until finely chopped.
- Mix cauliflower with eggs, flour, baking powder, garlic, Parmesan, parsley, salt, and pepper.
- Heat oil in a skillet over medium heat.
- Spoon batter into skillet and flatten into fritters. Cook 2–3 minutes per side until golden brown.
- Drain on paper towels and serve warm with dipping sauce.
Notes
Make sure cauliflower is dry to prevent soggy fritters. Serve hot for the best texture.
