Ingredients
  

Fritters
  • 1 medium head cauliflower, cut into florets
  • 2 large eggs
  • 0.5 cup all-purpose flour or almond flour for low-carb
  • 0.5 tsp baking powder
  • 2 cloves garlic, minced
  • 0.25 cup grated Parmesan cheese optional
  • 2 tbsp chopped parsley optional
  • salt and pepper, to taste
  • oil for frying

Equipment

  • Mixing bowl

Method
 

  1. Steam or boil cauliflower florets until tender, about 8–10 minutes. Drain well.
  2. Mash cauliflower or pulse in a food processor until finely chopped.
  3. Mix cauliflower with eggs, flour, baking powder, garlic, Parmesan, parsley, salt, and pepper.
  4. Heat oil in a skillet over medium heat.
  5. Spoon batter into skillet and flatten into fritters. Cook 2–3 minutes per side until golden brown.
  6. Drain on paper towels and serve warm with dipping sauce.

Notes

Make sure cauliflower is dry to prevent soggy fritters. Serve hot for the best texture.
