Ingredients
  

Salad
  • 1 can black beans drained and rinsed
  • 1 cup corn
  • 1 cup cherry tomatoes halved
  • 1 avocado diced
  • 0.25 cup red onion finely diced
  • 0.25 cup cilantro chopped
  • 1 jalapeño minced, optional
  • 1 lime juiced
  • 1 pinch salt
  • 1 pinch black pepper
BBQ Ranch Dressing
  • 0.25 cup ranch dressing
  • 2 tbsp BBQ sauce
  • 0.5 tsp chili powder
  • 0.25 tsp garlic powder
  • 0.25 tsp smoked paprika
  • 1 tsp lime juice

Method
 

  1. Whisk ranch dressing, BBQ sauce, chili powder, garlic powder, smoked paprika, and lime juice.
  2. Combine black beans, corn, tomatoes, onion, cilantro, jalapeño, and avocado in a bowl.
  3. Season with lime juice, salt, and pepper.
  4. Pour BBQ ranch dressing over the salad and gently toss.
  5. Serve immediately or chill for 10–15 minutes for deeper flavor.
