Method
- Preheat oven to 375°F (190°C).
- Dip tortillas briefly in warm birria sauce.
- Fill tortillas with birria beef and cheese, then roll.
- Arrange in baking dish and cover with remaining sauce.
- Top with cheese and bake covered for 20 minutes.
- Uncover and bake until cheese is melted and bubbly.
- Garnish with onion and cilantro before serving.
Notes
Serve with extra consommé on the side for dipping.
