Cheesy baked enchiladas filled with tender birria beef and smothered in rich red chile sauce.

Ingredients
  

  • 3 cups shredded birria beef
  • 2.5 cups birria sauce or consommé
  • 12 corn tortillas
  • 2 cups shredded Oaxaca or mozzarella cheese
  • 0.5 cup white onion finely diced
  • 0.25 cup fresh cilantro chopped

Equipment

  • Baking dish
  • Shallow pan
  • Foil

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Dip tortillas briefly in warm birria sauce.
  3. Fill tortillas with birria beef and cheese, then roll.
  4. Arrange in baking dish and cover with remaining sauce.
  5. Top with cheese and bake covered for 20 minutes.
  6. Uncover and bake until cheese is melted and bubbly.
  7. Garnish with onion and cilantro before serving.

Notes

Serve with extra consommé on the side for dipping.
