Ingredients
  

For the Chicken
  • 2 pounds boneless, skinless chicken thighs or breasts cut into strips
  • 3 tbsp olive oil
  • 4 cloves garlic minced
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika
  • 0.25 tsp onion powder
For the Garlic Parmesan Coating
  • 4 tbsp unsalted butter
  • 6 cloves garlic minced
  • 1 cup grated Parmesan cheese
  • 2 tbsp fresh parsley chopped
  • 1 tsp Italian seasoning
  • 0.25 tsp red pepper flakes optional

Method
 

  1. Preheat your Blackstone griddle to medium-high heat and lightly oil the cooking surface.
  2. In a large bowl, combine chicken pieces with olive oil, minced garlic, salt, pepper, paprika, and onion powder. Mix thoroughly to ensure even coating.
  3. Allow the seasoned chicken to marinate for at least 15 minutes at room temperature for optimal flavor absorption.
  4. Place the marinated chicken pieces on the preheated griddle, ensuring they don't overlap for even cooking.
  5. Cook for 4-5 minutes without moving, allowing the chicken to develop a golden-brown crust.
  6. Flip the chicken pieces and continue cooking for another 4-5 minutes until the internal temperature reaches 165°F.
  7. While the chicken finishes cooking, melt the butter in a small pan and sauté the remaining minced garlic until fragrant, about 1 minute.
  8. Remove the chicken from the griddle and immediately toss with the garlic butter mixture while still hot.
  9. Sprinkle the grated Parmesan cheese over the hot chicken, allowing it to melt and create a crispy coating.
  10. Add fresh parsley, Italian seasoning, and red pepper flakes, tossing gently to combine all ingredients.
  11. Serve immediately while hot, garnished with lemon wedges and additional parsley for a fresh finish.
  12. For best results, serve on warmed plates to maintain the optimal temperature and texture contrast.

Notes

For extra flavor, marinate chicken for up to 2 hours. Can be served on skewers for parties or sliced over salads. Store leftovers in refrigerator for up to 3 days.
