Ingredients
  

Crust
  • 1.5 cups graham cracker crumbs
  • 0.25 cup granulated sugar
  • 0.5 cup unsalted butter melted
Filling
  • 24 oz cream cheese softened
  • 1 cup sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • 0.5 cup sour cream
  • 0.25 cup heavy cream
Blueberry Layer
  • 2 cups blueberries
  • 0.33 cup sugar
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice
Crumble
  • 0.5 cup flour
  • 0.33 cup brown sugar
  • 0.25 cup butter melted

Equipment

Method
 

  1. Preheat oven to 325°F (160°C).
  2. Prepare crust and bake briefly.
  3. Cook blueberry mixture until thickened.
  4. Mix cheesecake filling until smooth.
  5. Layer batter and blueberry mixture.
  6. Add crumble topping.
  7. Bake until set.
  8. Cool and chill before serving.

Chill overnight for best flavor and texture.
