Ingredients
  

  • 1 cup fresh blueberries
  • 1.5 tbsp sugar or honey
  • 1 tsp lemon juice
  • 4 slices bread sourdough or brioche
  • 4 slices melting cheese cheddar, havarti, or brie
  • 2 tbsp butter softened

  • Spatula

Method
 

  1. Cook blueberries with sugar and lemon juice until thickened.
  2. Butter one side of each bread slice.
  3. Layer cheese, blueberry filling, and more cheese between bread.
  4. Cook in skillet over medium-low heat until golden and melted.
  5. Flip carefully and cook second side.
  6. Rest briefly, slice, and serve.

Notes

Use mild cheese for best balance.
