Ingredients
  

  • 2 tbsp unsalted butter room temperature
  • 4 slices artisan bread
  • 4 oz mild cheese such as mozzarella or fontina
  • 1 cup fresh blueberries washed and patted dry
  • 1–2 tsp honey optional
  • 1 tbsp fresh basil leaves thinly sliced, optional
  • 1/8 tsp sea salt
  • pinch black pepper optional

  • Skillet or griddle
  • Spatula

Method
 

  1. Prep the blueberries and basil.
  2. Butter one side of each bread slice.
  3. Layer cheese, blueberries, honey, basil, salt, and pepper.
  4. Place the top bread slices and press gently.
  5. Heat skillet over medium heat.
  6. Cook sandwiches until golden brown and cheese is melted.
  7. Cool slightly and slice.
  8. Serve warm.
