Method
- Cook blueberries in a saucepan over medium heat for 5–6 minutes until softened.
- Mash the blueberries and stir in lemon juice, then let cool.
- Mix Greek yogurt, honey, and vanilla extract in a bowl.
- Add spoonfuls of blueberry puree and gently swirl.
- Drop spoonfuls onto a parchment-lined baking sheet.
- Freeze for 2–3 hours until firm.
- Transfer to an airtight container and store in the freezer.
Notes
Use thick Greek yogurt for best results. Store frozen bites in the freezer for up to 2 months.
