Ingredients
  

  • 1 lb firm white fish cut into chunks
  • 0.5 lb shrimp shell-on
  • 1 lb mussels cleaned
  • 3 tbsp olive oil
  • 1 onion chopped
  • 1 fennel bulb sliced
  • 3 cloves garlic minced
  • 14 oz tomatoes crushed
  • 4 cups fish stock
  • 1 strip orange peel
  • 0.5 tsp saffron threads
  • 1 bay leaf
  • 1 tsp fresh thyme
  • 1 tsp salt or to taste
  • 0.5 tsp black pepper

Method
 

  1. Sauté onion, fennel, and garlic in olive oil.
  2. Add tomatoes, saffron, herbs, and stock; simmer.
  3. Add firm fish and cook briefly.
  4. Add shrimp and mussels; cook until shells open.
  5. Season and serve hot.

Notes

Serve with toasted bread and rouille for a traditional experience.
