Ingredients
  

Chicken
  • 4 chicken breasts boneless, skinless
  • 1 tbsp olive oil
  • 2 tbsp butter
  • salt and pepper to taste
  • 1 tbsp flour optional, for dredging
Sauce
  • 8 oz mushrooms sliced
  • 3 cloves garlic minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 5.2 oz Boursin cheese Garlic & Fine Herbs
  • 1 tsp Italian seasoning optional
  • fresh parsley for garnish

Method
 

  1. Season chicken with salt and pepper and dredge lightly in flour if desired.
  2. Heat olive oil and butter in a skillet over medium-high heat.
  3. Sear chicken 4-5 minutes per side until golden; remove from skillet.
  4. Add mushrooms and sauté until browned, about 5–7 minutes.
  5. Add garlic and cook for 1 minute.
  6. Pour in chicken broth, scraping up browned bits.
  7. Add heavy cream and Boursin cheese; stir until melted and smooth.
  8. Return chicken to skillet and simmer 8–12 minutes until cooked through.
  9. Garnish with fresh parsley and serve warm.

Notes

Add spinach for a veggie boost. Use thighs instead of breasts for extra juiciness.
