Method
- Season chicken with salt and pepper and dredge lightly in flour if desired.
- Heat olive oil and butter in a skillet over medium-high heat.
- Sear chicken 4-5 minutes per side until golden; remove from skillet.
- Add mushrooms and sauté until browned, about 5–7 minutes.
- Add garlic and cook for 1 minute.
- Pour in chicken broth, scraping up browned bits.
- Add heavy cream and Boursin cheese; stir until melted and smooth.
- Return chicken to skillet and simmer 8–12 minutes until cooked through.
- Garnish with fresh parsley and serve warm.
Notes
Add spinach for a veggie boost. Use thighs instead of breasts for extra juiciness.
