Cookie Dough
  • 2.25 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 1 cup unsalted butter browned
  • 1 cup brown sugar packed
  • 0.5 cup granulated sugar
  • 2 eggs large
  • 2 tsp vanilla extract
  • 2 tsp espresso powder
  • 1 cup toffee bits

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets.
  2. Brown butter until golden and fragrant; cool slightly.
  3. Whisk flour, baking soda, and salt.
  4. Mix browned butter with sugars until smooth.
  5. Add eggs, vanilla, and espresso powder.
  6. Fold in dry ingredients and toffee bits.
  7. Scoop dough onto baking sheets.
  8. Bake 10–12 minutes until set on edges.

Notes

Slightly underbake for soft centers and gooey toffee.
