Ingredients
  

  • 1.5 lb chicken breasts or thighs boneless, skinless
  • 2 tbsp olive oil
  • 2 tsp Cajun seasoning plus more to taste
  • 1 tsp smoked paprika
  • salt to taste
  • black pepper to taste
  • 1 onion diced
  • 2 bell peppers diced
  • 3 cloves garlic minced
  • 1.5 cups long-grain white rice
  • 3 cups chicken broth
  • 0.5 tsp dried thyme
  • 0.5 tsp dried oregano

Equipment

  • Large skillet with lid
  • Wooden spoon

Method
 

  1. Season chicken with Cajun seasoning, paprika, salt, and pepper.
  2. Sear chicken in hot olive oil until golden; remove and set aside.
  3. Sauté onion and bell peppers until softened; add garlic.
  4. Stir in rice and toast briefly.
  5. Add chicken broth, thyme, and oregano; stir to combine.
  6. Return chicken to pan, cover, and simmer until rice is tender.
  7. Rest briefly, fluff rice, and serve warm.

Notes

Adjust Cajun seasoning to control spice level.
