Method
- Season chicken with Cajun seasoning, salt, and pepper.
- Heat olive oil in skillet and sear chicken 3–4 minutes per side until golden. Remove and set aside.
- Add butter and sauté onion, bell peppers, and garlic until fragrant.
- Stir in rice and toast for 1–2 minutes. Add spices and chicken broth.
- Return chicken to skillet. Cover and simmer 18–22 minutes until rice is tender and chicken is cooked through.
- Fluff rice, garnish with parsley or green onions, and serve warm with lemon wedges.
Notes
Adjust spice level as desired. For extra flavor, stir in a splash of cream or cheese before serving.
