  • 2 tbsp olive oil
  • 4 boneless, skinless chicken breasts
  • 2 tsp Cajun seasoning plus more to taste
  • salt and pepper to taste
  • 1 small onion chopped
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 3 cloves garlic minced
  • 1 cup long-grain white rice uncooked
  • 2.25 cups chicken broth
  • 0.5 tsp smoked paprika
  • 0.5 tsp garlic powder
  • 0.25 tsp cayenne pepper optional
  • 1 tsp dried thyme
  • 0.5 tsp dried oregano
  • 2 tbsp unsalted butter
  • fresh parsley or green onions for garnish
  • lemon wedges optional, for serving

Method
 

  1. Season chicken with Cajun seasoning, salt, and pepper.
  2. Heat olive oil in skillet and sear chicken 3–4 minutes per side until golden. Remove and set aside.
  3. Add butter and sauté onion, bell peppers, and garlic until fragrant.
  4. Stir in rice and toast for 1–2 minutes. Add spices and chicken broth.
  5. Return chicken to skillet. Cover and simmer 18–22 minutes until rice is tender and chicken is cooked through.
  6. Fluff rice, garnish with parsley or green onions, and serve warm with lemon wedges.

Notes

Adjust spice level as desired. For extra flavor, stir in a splash of cream or cheese before serving.
