Ingredients
  

  • 4 slices sourdough bread
  • 2 tbsp unsalted butter softened
  • 1 large yellow onion thinly sliced
  • 1 medium apple thinly sliced
  • 4 slices sharp cheddar cheese
  • 4 slices Gruyère cheese
  • 1 tsp fresh thyme optional
  • to taste salt
  • to taste black pepper

Method
 

  1. Melt a small amount of butter in a skillet over medium-low heat. Add sliced onions and cook slowly until deeply caramelized, about 20–25 minutes.
  2. Thinly slice the apple and set aside.
  3. Butter one side of each bread slice. Place one slice butter-side down in the skillet.
  4. Layer cheddar and Gruyère cheese, caramelized onions, apple slices, thyme, salt, and pepper. Top with second slice butter-side up.
  5. Cook over medium-low heat until golden brown, flip carefully, and cook until cheese is melted.
  6. Remove from skillet, rest briefly, slice, and serve warm.

Notes

For best results, cook the sandwich slowly to ensure even melting without burning.
