Ingredients
  

Salad
  • 2 carrots peeled
  • 2 cucumbers
Dressing
  • 2 tbsp Dijon mustard
  • 3 tbsp olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp fresh herbs parsley or dill
  • 1 tsp sesame seeds optional

Method
 

  1. Peel and slice carrots into ribbons and thinly slice cucumbers.
  2. Whisk mustard, olive oil, vinegar, honey, salt, and pepper in a bowl.
  3. Combine carrots and cucumbers in a large bowl.
  4. Pour dressing over vegetables and toss well.
  5. Add fresh herbs and mix lightly.
  6. Garnish with sesame seeds and serve.

Notes

For best flavor, let the salad sit for 10 minutes before serving.
