Ingredients
  

  • 2 carrots peeled into ribbons
  • 2 cucumbers peeled into ribbons
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tbsp extra virgin olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 tbsp fresh parsley or cilantro chopped
  • 1 tsp sesame seeds optional

Method
 

  1. Peel carrots and cucumbers into ribbons.
  2. Whisk lemon juice, zest, olive oil, salt, and pepper.
  3. Toss ribbons with dressing gently.
  4. Let rest 5–10 minutes.
  5. Garnish with herbs and sesame seeds before serving.
