Ingredients
  

Salad
  • 4 cups green cabbage shredded
  • 2 cups red cabbage shredded
  • 1 cup carrots grated
  • 0.5 cup roasted cashews chopped
  • 0.33 cup green onions sliced
Dressing
  • 0.5 cup mayonnaise
  • 0.25 cup plain Greek yogurt
  • 2 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 0.25 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Combine cabbages, carrots, and green onions in a large bowl.
  2. Whisk together dressing ingredients until smooth.
  3. Toss salad with dressing until evenly coated.
  4. Fold in cashews just before serving and chill 20–30 minutes.

Notes

Add cashews just before serving to keep them crunchy.
