Ingredients
  

Chai Base
  • 2 cups full-fat coconut milk
  • 0.5 cup water
  • 1 cinnamon stick
  • 3-4 cardamom pods lightly crushed
  • 3 whole cloves
  • 0.5 tsp fresh grated ginger
  • pinch black pepper
  • 1-2 tbsp maple syrup or honey

Equipment

  • Small saucepan
  • Fine mesh strainer
  • Measuring cups
  • Wooden spoon

Method
 

  1. Heat coconut milk and water in saucepan over medium heat.
  2. Add spices and simmer gently for 8–10 minutes.
  3. Add tea bag if using and steep 3–4 minutes.
  4. Remove from heat, stir in sweetener.
  5. Strain into mugs and serve warm.

Notes

Do not boil to prevent coconut milk separation. Adjust sweetness and spice strength to preference.
