Ingredients
  

Beef and Mushroom Filling
  • 1 lb ground beef
  • 2 cups mushrooms chopped
  • 1 onion diced
  • 2 garlic cloves minced
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp salt
  • 0.5 tsp pepper
  • 1 cup cheese shredded
  • 1 tbsp olive oil
Tzatziki Sauce
  • 1 cup Greek yogurt
  • 0.5 cup grated cucumber squeezed dry
  • 1 tbsp lemon juice
  • 1 tbsp dill chopped
  • 1 garlic clove minced
  • 1 tbsp olive oil
  • salt and pepper to taste
Pita
  • 4 pita pockets

Method
 

  1. Mix all tzatziki ingredients in a bowl and chill.
  2. Sauté onion and garlic in olive oil until fragrant.
  3. Add mushrooms and cook until browned.
  4. Stir in ground beef, breaking it apart until browned.
  5. Season with paprika, cumin, salt, and pepper.
  6. Simmer until liquid evaporates, then stir in shredded cheese.
  7. Warm pita pockets.
  8. Stuff pitas with beef and mushroom filling.
  9. Add tzatziki sauce and garnish with herbs.

Notes

For lighter pockets, use ground turkey or add spinach.
