Ingredients
  

  • 12 oz pasta penne or rotini
  • 1 lb chicken breast cubed
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 0.5 cup milk
  • 4 oz cream cheese softened
  • 1 cup cheddar cheese shredded
  • 1 cup mozzarella cheese shredded
  • 0.5 cup parmesan cheese grated

Equipment

  • Large pot
  • Large skillet
  • Wooden spoon

Method
 

  1. Cook pasta in salted water until al dente. Drain and set aside.
  2. Season chicken and cook in olive oil until golden and cooked through.
  3. Melt butter in skillet, add garlic, and sauté briefly.
  4. Add cream and milk, simmer gently.
  5. Stir in cream cheese until smooth.
  6. Add shredded cheeses gradually, stirring until melted.
  7. Combine pasta and chicken with sauce, toss well, and serve.

Notes

Add pasta water if sauce is too thick.
