Cheesy Ground Beef and Potatoes

  • 2 pounds ground beef
  • 6 large potatoes thinly sliced
  • 2 cups shredded cheddar cheese
  • 1 onion diced
  • 2 cloves garlic minced
Sauce
  • 1 cup milk
  • 2 tablespoons all-purpose flour
  • 2 tablespoons butter
Seasonings
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika
  • 0.25 teaspoon dried thyme
  • 2 tablespoons fresh parsley chopped, for garnish

Method
 

  1. Preheat oven to 375°F (190°C). Grease a 9x13 inch baking dish.
  2. Brown ground beef in a large skillet over medium-high heat, breaking apart as it cooks, about 8-10 minutes.
  3. Add diced onion and minced garlic to beef, cooking 3-4 minutes until onion is translucent.
  4. Season beef mixture with salt, pepper, paprika, and thyme. Set aside.
  5. In a small saucepan, melt butter over medium heat. Whisk in flour and cook 1 minute.
  6. Gradually add milk while whisking constantly. Cook until sauce thickens, about 3-4 minutes.
  7. Layer half the potato slices in the bottom of prepared baking dish, overlapping slightly.
  8. Spread beef mixture evenly over potatoes. Pour half the sauce over beef layer.
  9. Add remaining potato slices on top. Pour remaining sauce over potatoes.
  10. Sprinkle shredded cheddar cheese evenly over the top layer.
  11. Cover with aluminum foil and bake 45 minutes.
  12. Remove foil and bake additional 20-25 minutes until cheese is golden and potatoes are tender.
  13. Let rest 10 minutes before serving. Garnish with fresh parsley.

Notes

For best results, slice potatoes uniformly for even cooking. Drain excess grease from ground beef if needed. Can be assembled ahead and refrigerated before baking. Leftovers reheat well in oven or microwave.
